I never had a chance to try the old Copper Hog before it closed, and I was excited when it reopened after renovations. Unfortunately, I can't say that I was really impressed. I took my folks here while they were in town yesterday, and although there were perhaps three or four other groups of people at the restaurant, it took a surprisingly long amount of time for our meal to arrive. The food itself was okay - my dad and I had the Poke bowl, and the spicy ahi tuna was pretty excellent in its own right. Unfortunately, there wasn't much else to balance it. The rice seemed to be at least a day old, as it was pretty dry and firm, and the dish overall was unbelievably salty. My mom's veggie dish was good. Overall, though, it seems like the menu isn't really cohesive, the food options are okay, and the waitstaff was fine. I really wanted to like this restaurant, but there are so many other places in Bellingham that serve better food, have better service, and aren't as expensive. I hope things get better for the Copper Hog.
